Please forgive me but oh how I loathe toffee apples...
However, if you must, please find beautiful, crisp, crunchy, juicy, sweet, delicious apples and use those. Maybe the heat of the toffee being applied will ruin the apples anyway...........I don't know.
Why do people do toffee apples? Maybe we should be doing toffee bananas or something? Toffee mandarins? Toffee lemons.........ahahahahahhhha ha - imagine the face! Toffee cherries. We could encase icecream balls in toffee. Little butter balls in toffee. Cheese in toffee. Raisins and sultanas in toffee. Yes, well, enough.
Oh well hang on. It's all been done! (of course)
Mmmm, toffee bananas with icecream... [asiasociety.org]
Toffee mandarins and oranges too! [www.taste.com.au] [sososimple.blogspot.co.nz]
Toffee lemons hah. No.

Icecream balls in toffee [www.ezrapoundcake.com]
Little butter balls of toffee. I guess that's called butterscotch...
Cheese in toffee. Well I never. [homecooking.about.com] [www.selectcheeses.com]
Raisins and sultanas in toffee. They're just grapes aren't they? [www.taste.com.au]

Oh the memories - we used to make them as kids!
Alison Holst has a recipe for toffee apples in her "Recipes to Remember" book. Her comments are that the toffee apples need to be transferred to airtight containers or wrapped singly in airtight wrap........toffee which is left to stand uncovered will turn sticky and soften in about half an hour. She also mentions to make toffee apples only a short time before they will be eaten. I'm happy to send you the recipe if you would like it. The recipe gives enough toffee for 12 small apples.
Regards,
Dawn.

I am with J1 - I loathe toffee apples as well. As kids we used to eat the toffee, take an obligatory bite of the apple and throw the rest away.
I think to get it right you need really small apples that are very crisp.
The only toffee apples I have ever enjoyed was at a finger food party where chunks of dried apple had been coated in toffee to form a ball on a paddlepop stick. They were about the size of kids lollypop and they were divine.

In one of my Edmonds recipe books there is a recipe for toffee apples. If you wish, I am happy to PM it to you. It is the one we used as kids. It seems you will be having toffee coming out of your ears.
Reading one of Wendyl Nissen's recipes she substituted beetroot juice for red colouring. Her recipe is very close to that in my Edmonds book.

I haven't eaten one in years, but the memories are still with me.
If I could have only one fruit, my choice would be a nice, crisp and juicy apple.

J1, I had to laugh at your post. I get the drift you don't really like toffee! Anyway, I personally don’t really like toffee apples much as I have memories of soft, floury apples from my childhood, but we are doing a fund raiser and I plan on getting the crunchiest apples possible from the markets. Dawn and Marnie, could you please PM me your recipe. Many thanks.
