I mowed through a good amount of surplus zucchini today making Zucchini Relish [www.awapuni.co.nz]. I'm delighted with it! I may even make another batch with my surplus pattypans. Using red capsicams gives it a lovely colour so it's eye appealing. Would be delicious with cheese and crackers - bring it on!
I used the largest hole grater on my food processor to grate the zucchini and used the chopping blade to chop the onions and red capsicums. I used white vinegar instead of malt vinegar.

I was puzzling over what patty pans had to do with making zucchini relish though. I thought maybe you were going to make some zucchini relish MUFFINS in your patty pans... But then the internet revealed all. I have seen them around, but never knew their name until this moment!

Oh yes J1, the reference to pattypans was a bit ambiguous wasn't it! I used to make Alison Holst's recipe for Branston Pickles muffins. Maybe I could substitute? Branston pickle is a chunky pickle by comparison though.
Pattypans are zucchini's in disguise I think! Another shape, colour, and form and I love their shape. I use them just the same as I do with zucchinis.

Hello barbie girl, you are correct, pattypan is another quite common name for scallopini. I find myself referring to them as pattypans because of their lovely shape rather than scallopini which the word doesn't have such a nice or descriptive 'ring' to it.

But, I've just stopped to think???? (probably a rare occasion for me) about it longer and of course 'scallop' does give just as much a descriptive notation as does pattypan doesn't it!!

You can substitute butter for oil in any cake recipe at any time. The ratio is the same. E.g. half a cup (125ml/grams) of oil is equal to half a cup (125ml/grams) of butter and vice versa, etc, and for all quantities. I do it all the time, as I don't like using any oil except evoo (no good for most cakes).

That's an excellent idea karena ..........I make zucchini soup ready to go and freeze it in ice cream containers ready to use but it puts my freezer space at a preimium at this time of the year. Zucchini soup is a 'yum' soup!

Well, my two zucchini plants have produced absolutely nothing other than some "look, I'm going to be one" and then saying "oh sorry, I'm not going to get going, I think I'll fade away" - very disappointed in my vege produce this year.
So I have just given them a small "chance" to make some headway - probably too late; but as I've more or less decided to do away with inground garden and stick pots/similar they are both out of the garden; in a separate large pot on the porch...well watered - and will be feed more later - there is food in pots!

We've got the opposite - zucchini saying "I think I'll be a marrow this afternoon" and doing just that.

last year, was my first year of vege garden production and I was picking and giving away as I was overloaded with just one plant. I only got the 2 plants because there was a second in the pot!
oh well, never mind...maybe next year will be better for me. I intend to have a go at "out of the ground" production and see if that is easier. I have 2 porches back/front (one very tiny but still has shelf window space...

Ha Cathy, your zucchini are like mine this year. 2plants suit me normally, but this year have been useless. I have however a mystery marrow that grew in my lawn...my children call it the pumkini - it has spread out in all directions, currently 5mx 5m. the marrows are like butternut shape but green like zucchini...it also produces a minimum of 4 fruit a day. Freezing in 500gm lots seems like a good idea.

Deb, do you puree the raw zucchini for the "guacomole" and how young / small should the zucchini be? Please can you share, and give an idea of how many you would use, and the process for zuchini guacomole. I am intrigued, and would like to give it a try.

I made these on Tuesday. I got my 9 year old to hollow out the zucs. (told him it was tunnelling) Took him about 15 minutes. I used up 8 zucs that were 7-8 cm in diameter. I had to trim the thicker sides so I could put the lid on the frying pan. I also checked that they all fitted before my boy started hollowing, and swapped some, and trimmed some sides on the fatter ends.
All the urchins, and my visitors ate them, and took the spare one home for her man! I thickened the sauce with a little cornflour once I had taken the zucs out. I served them at room temperature, and served the sauce separately and I had salads, so it didn't feel wintery at all. One of my visitors was vegetarian, so I stuffed her one with rice, spices and sliced mushroom.

This is another lovely zucchini loaf recipe - uses dried figs and almonds and is truly delicious. I reduced the amount of oil - used 1/2 cup oil and 1/4 cup yoghurt. [www.radionz.co.nz]

Gayle, I love your re-naming of cucumbers: cumcubers! P'raps we could re-name zucchini's as chinizuch's. Nice idea to make B&B pickles out of zucchinis, I will keep that in mind.

Gayle I made the Bread and Butter Pickles out of surplus zucchinis yesterday thanks to your suggestion. They are great! I used the recipe out of last week's NZ Herald Bite Magazine which was for cucumbers, but the zucchini were a great substitute.
For anyone wanting to use up some marrows Bite Magazine also had a recipe for Piccalilli which substituted courgettes for 1.5kg of marrow. I can't find the recipe on line yet but can give it if anyone wants it.
