I make chocolate meringue, and chocolate mousse and layer together. I call it chocolate meringue mousse cake, the kids for a reason known only to them call it "chocolate bone cake". (I have decorated it in the past with lengths of piped meringue and chocolate lace...maybe the meringue lengths reminded them of bones?).
I've found that pretty much all dessert components can be made ahead and just assembled on the day.

Noeleen, how do you place three meringue discs into the oven and at what temperature? Fanbake?
I'd love to try a recipe like yours for something a bit different from pavs.

Noeleen, how do you place three meringue discs into the oven and at what temperature? Fanbake?

In case it's helpful here's the recipe I use for Dacquoise, a classic French dessert which lends itself to all kinds of fruit, especially green seedless grapes. Use an eau de vie or other alcohol that complements whatever fruit you are using.
Dacquoise
Serves 6
100g ground almonds/hazelnuts
1 level tab cornflour
4 egg whites
150g sugar
½ tsp vanilla extract or almond essence
Mix almonds & cornflour. Whisk egg whites until stiff, beat in 2 tab of the sugar. Fold in rest of sugar, then almond mixture and essence.
Bake in two 18cm rounds on baking paper 150C 40 – 50 min until just coloured.
Sandwich with whipped cream and fruit. Flavour cream with eau de vie or liqueur.
Assemble 3 – 24 hours in advance.

Last night we had our first for the Xmas season pot luck dinner Christmas function to go to and the day before I made Jo Seagar's baked Chocolate Fudge Torte. Knowing there would be a selection of desserts I was able to cut this one into 20 single serving slices because it is extremely rich. It can be made several days before you need it and stored in the freezer too. It needs to be kept cold until serving. I can't find the recipe on the internet, but if anyone wants it I can type it out for you. It is a melted chocolate, ground almonds, eggs etc. mixture and the texture is like a dense moist brownie and it has a ganache topping and was easy to make. It was very popular, but a small amount goes a long way - very decadent and a very special occasion kind of dessert!

Lorna, no that's not the recipe, Jo Seagar's recipe has only chocolate, butter eggs sugar and ground almonds in it. I had a good hunt on the internet, but couldn't find it.
Kayc, Jo's recipe is in her Nifty Tricks for Entertaining book. I will 'private mail' the recipe to you and Marylew today.
