We had roast chicken tonight and whilst it was delicious - I stuffed a few lemons up its bum, added some apples to the roast vegetables, gave it a bit of a drizzle with olive oil, basted midway, and a scattering of Moroccan seasoning over all, I always find the breasts dry.
Is there anyway to prevent this from happening? The chook is always cooked with the breasts down.

Buy a meat thermometer so you can ensure your aren't over cooking it perhaps? I also mix chopped herbs and garlic into soft butter and stuff that under the skin and it drips through. I also butterfly a chicken (cut the spine out with scissors and lay it flat in the roasting pan) so the whole thing cooks quicker and more evenly.

You could cover the breasts with a couple of rashers of bacon - that used to be done in the days before lovely young chickens became available and roasted chooks took forever to cook tender. I don't think chicken breast is ever the succulent part of chicken because it's a solid piece of meat with no fat, but if you cut against the grain of the meat it will help.

Forgot to add that I totally agree with Jenna - a meat thermometer I wouldn't do without now. They need not be expensive to buy.

since I learnt to debone a chicken, do so nearly every time we have a roast - it goes much further and cooks much more evenly. I also stuff either herb butter and or stuffing under the skin of the breast meat as per Jenna if i don't debone the chicken to help keep it moist. Resting the roast before carving makes a huge difference too.

I lift the skin at the neck, and wriggle my fingers in up to end of the breast bone. Lifting the skin away from the breast, then I slide in some butter with garlic, parsley, sage and thyme in to the gap I have made. Some times I insert bacon instead of the butter mixture. I start the cooking with the breast side of th chichen down and then turn the breast side up half way through cooking and then 30 min before serving turn again, with breast side down. It keeps the juices in and is never dry.

I have cooked my roast chickens the same way since I found this recipe, and it calls for 45 minutes @ 220c and 45 minutes to rest. Don't open the door once it starts cooking and I get RAVE reviews from every person I've cooked it for. Not one complaint of dry breasts ever.
I was initially very dubious about how short the cooking time was, but believe me when I say, so long as you don't open the oven door no matter how much you want to, it will be cooked after 90 minutes!

Roast thighs and legs and separately poach the breast for 15mins in an aromatic broth of onion, peppercorns, bay leaf, carrot and celery. DONT boil it - a very gentle simmer for 15 mins. The healthy people in the family can have the breast and the finger licking skin and bone lovers can munch out on the good stuff.

I've made this several times and it was as tender and juicy as anyone would want. You can use thighs, drums or breasts and it's equally as good:
Ingredients
4 chicken thigh cutlets
1 tablespoon white wine
2 teaspoons soy sauce
1½ tablespoons mayonnaise
Schishimi Togarashi to taste
6 tablespoons dried breadcrumbs
Directions
Put the thighs in a bowl. Sprinkle wine and soy sauce over them and rub into meat. Put into aluminum foil cups and pour mayonnaise over them. Mix the breadcrumbs with ¼ teaspoon schishimi togarashi and sprinkle half over the thighs.
Bake at 180°C for 10minutes. Turn the pieces over carefully and sprinkle over the remaining spiced breadcrumb mixture. Bake for a further 10 minutes.
