Red Onions

I cannot contemplate a Summer salad without the addition of red onion.
How do you fellow foodies buy them ? Do you buy the ones that have had the outer papery skin removed, or do you buy them with that skin intact ? I have tried both and at times neither have kept for a considerable length of time, they start to show mildew on them. I keep them stored in a dark cupboard with the brown onions which seem to keep much longer and never go off.

Red onions don't seem to keep nearly as long as brown ones. I don't think it matters if the outer layers have been removed or not. I choose the hardest ones - if there is any give in them they are starting to deteriorate.
The red onions being sold at present are very poor quality and I assume they are end of season. I can't wait for our own crop to mature - we love them and eat them raw practically every day.

If I see them I go for the red onion which has a flat top - it's a bit like a disc (or imaginary flying saucer) and they can sometimes have quite a large circumference. I think they have the loveliest flavour and thickest flesh. Otherwise I buy the rounded more normal looking red onion. I buy either peeled of papery skin, or with it - I prefer to buy with the skin on as I feel I can get a better perspective of it's condition. I usually check that an onion feels really firm because if it's losing it's firmness then it's probably getting ready to send out a shoot at the top of the bulb. Sometimes if you look you can actually see this is happening. I keep red onions in the vegetable bin in my fridge. I buy only 3 or 4 at a time and they don't have time to go off whereas brown onions I keep out of the fridge and buy in much larger quantity and they mostly keep ok.
I couldn't imagine life (let alone salads) without red onions in it!

Thank you for those tips, Dawn, I will certainly take them on board. I have never thought about putting them in the veggie bin in the fridge, although I always keep the Spring onions in there.
I will be careful when feeling for firmness and hope that there isn't a sign in sight saying "don't squeeze me until I am yours" ..... lol.
Good luck with your crop, TPANDAV, I don't mind paying the price for them but I like to get good quality.

I don't refrigerate my onions - as with potatoes the cold and humidity turns the starches into sugars and they actually get softer more quickly than they do out of the fridge. I just buy them a few at a time and squeeze them fiercely. Yay for red onions! I use them all the time in summer, especially as a substitute for spring onions - love spring onions but red onions are so much cheaper.
