I've been given 2 icecream contains of loquats, how would you use them?

Either Jam or eat them like that. Very fiddley for either option but the jam is lovely

Ive a tree full of them and they are juicy and ready to use right now - before the birds get them. My kids eat them as is when they are outside playing.

What about this idea? Chicken and loquat skewers?

Or a loquat salsa? It could go with so many things...

8 loquats, halved, stones removed and finely chopped
6-8 cherry tomatoes, halved or quartered
¼ red onion, finely chopped
coriander, finely chopped
Juice of one lime (approximately 2 tbsp)
1 tsp extra virgin olive oil
½ tsp soft brown sugar (or sweetener of your choice
Salt and pepper to taste
Mix and let the flavours infuse.
