Howdy Foodlovers. I have a huge plot of jersey benne potatoes and have been using them in a variety of ways but my version of a potato salad is very dull/lazy and has just potatoes, spring onions and mayonnaise. I would like to jazz it up a bit so please let me know what you put into yours. Any interesting variations on dressings would be helpful too thanks

My favourite potato salad is a bit like a Tartare Sauce, with real mayonnaise (made with olive oil, egg yolks and lemon juice), capers, gherkins, chives or onion, parsley, tarragon in season. Chopped hard boiled eggs are a good addition.
If I have some dry white wine open I will marinate the potatoes in it before dressing them - as soon as the potatoes are cooked I drain them and pour in enough wine to half cover them, turn them over periodically. and leave to cool. Drain then dress with mayonnaise. The wine gives a lot of flavour and also means that the potatoes don't soak up so much mayo, so the salad is lighter.

Have you tried an I n d i a n spiced potato salad? Something different and full of flavour.
Heat some cooking oil in a hot frypan.
Add a 2cm piece of finely chopped fresh ginger, 1 clove of finely chopped garlic and fresh chilli (to taste) and stir-fry for a few seconds.
Stir through your cooked potatoes.
Dry-fry 1/2 tablespoon of cumin seeds. Add to Potatoes.
Stir through greek yoghurt (enough to coat the potatoes)
Add fresh coriander and sprinkle cayenne pepper to serve.

Cooked (crispy) bacon can always be added to potato salad! (Some people might put ham in instead but I have an aversion to ham.)
Chopped mint is always good too.
Really, any sort of thing can be added. Cooked corn kernels are good, uncooked red capsicum (diced small) to add colour, etc. Scarlet runner beans, cooked and sliced into 2cm lengths. Peas! Halved cherry tomatoes (those "jellybean" ones have fabulous flavour).
Also, MrsCake put this on foodlovers once and I noted it:
Dressing for Potato Salad:
Per kg of potatoes, add:
2 tbspns olive oil
3 tbspns lemon juice
zest of a lemon
a small bunch of chives, chopped
6 tbspns natural yoghurt
s&p
OR hummus or yoghurt mixed through with lemon juice, seasoning and herbs.

Along with the usual good quality thick mayonnaise and potatoes and eggs, we like celery sliced straight across (not on the diagonal), celery seeds, and onion salt added.

I use finely chopped red onion, parsley, chives or spring onions, thick mayonnaise mixed with some thick mint sauce.
Even if potatoes have been cooked in salted water they often need salt and pepper added, but that's up to the individual taste

Hi Cantabcook - a bit off your original topic, but isn't homemade mayo just the best??? I put tarragon sprigs into white wine vinegar just to use in my mayo. I've had salads either 'bare'. or with perhaps a squeeze of lemon for years, as I cannot abide the bought stuff, and loathed that nasty homemade condensed milk/malt vinegar dressing, and then I had someone's mayo and pow I was hooked!

Some of the things I put in potato salad besides those mentioned above - chorizo (sometimes in addition to bacon), smoked fish, diced cornichons or sweet pickles, balsamic or chipotle dressing, blue cheese - all of which provide great counterpoints in taste and/or texture to the key ingredients of potato and mayo. Smoked potatoes are also incredible.
