Courgette Loaf

I made a fabulous courgette loaf last night, intending to photograph it today but instead I am reclining with sore head and throat.
Anyway the recipe which will of course be published is

1/2 cup oi
2 eggs
3/4 cup sugar
1 teaspoon vanilla
1 cup grated courgette
1/4 cup chopped brazil nuts
1/4 cup sunflower seeds
1 1/2 cups flour
1 teaspoon cinnamon
pinch salt
1/2 teaspoon baking soda
1/4 teaspoon baking powder

bake at 170 for 50 minutes or so.
Very much a derivative of carrot cake but so lovely with the nuts and seeds.

This sounds great - do you think you could get away with NOT including the sugar? Is it meant to be sweet? I like the idea of it being more savoury and served with a slice of cheese/tomato.

You'd need to remove the vanilla and cinnamon too, but I feel it would be too cakey in texture to serve it the way you are thinking. I'm going to give this a go to use up some of my glut. [www.bbcgoodfood.com] it's probably more what you are thinking, you could add the nuts/seeds if you wished.
