hi am making my son wedding cake and they want to have a chocolate cake layer.
Does anyone have a recipe that is good for this it has to travel well, it is at least 5 hour trip to wedding so going the day before.
Can also do the white icing thing royal icing?
what is everyone suggestions

I have a recipe for a chocolate cake that I use all the time - its easy to make, moist and rich.
I double the recipe to make it a deeper cake and also it I want to use a bigger than 20cm tin and it works perfectly
What you need
2 cups of flour
2 cups of brown sugar
1 cup cocoa
2 tsp baking soda
1 tsp baking powder
1 tsp salt
2 large eggs
2 tsp vanilla essence
1 cup cream
1 cup milk
1/2 cup vegetable oil
How to make
Preheat oven to 180c. Mix everything together until smooth. Pour into greased 20cm diameter (deep) cake tin and bake for 45mins (approx). Test with skewer, cake is ready when it is clean.

My go to Chocolate Cake has always been the Coca Cola Chocolate Cake Recipe here in the FL recipe bank

My granddaughter stayed over the school holidays and insisted that we make the same cake as her mum, which is on the Chelsea Sugar website here [www.chelsea.co.nz]
That also was lovely, but my favourite would still be the Coca Cola version

Try this recipe.
Ingredients:
2 cups white sugar
1 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour two nine inch round pans.
2. In a large bowl, stir together the sugar, flour, cocoa, baking powder, baking soda and salt. Add the eggs, milk, oil and vanilla, mix for 2 minutes on medium speed of mixer. Stir in the boiling water last. Batter will be thin. Pour evenly into the prepared pans.
3. Bake 30 to 35 minutes in the preheated oven, until the cake tests done with a toothpick. Cool in the pans for 10 minutes, then remove to a wire rack to cool completely.

Carolynab, I suggest that as you have a five hour journey the day before the wedding, you don't want to be mucking about with Royal icing that needs time to set. I would go for the fondant icing you can buy in packs that just needs rolling out and draping on the cake, then whatever decoration you want, but something simple, like artificial ready made flowers and ribbons, etc.
Also, I'm no cake decorator but as the cake is going to be chocolate, you may need to put a marzipan layer between the cake and fondant to stop the fondant discolouring.

I'll show the best cake for wedding "Chocolate Lava Cake Recipe"
Ingredients
--- 135 gms Dark Chocolate
--- 95 gms Butter
--- 100 gms Icing Sugar
--- 2 Egg Yolks
--- 2 Whole Eggs
--- 35 gms All Purpose Flour
Directions:
1 Add chocolate and butter to microwave bowl.
2 Melt it in oven.
3 Take another bowl and add sugar, eggs.
4 Mix them together chocolate and butter with sugar.
5 Add flour to it and mix it well with the butter mixture.
6 Mix them well and make sure you do not see any lumps in the mixture.
7 Keep it refrigerator for about 10 minutes.
8 Grease the ramekin and pour the mixture in it.
9 Bake them for about 10 minutes under 200 degrees F.
10 Remove them from oven and serve it with Cool Lassie.
Done!!

Try this moistest Chocolate mug Cake Recipe at home. You just need few ingredients to make. Have a look at the recipe.
Ingredients

2 Tablespoons Crushed Ereo Cookies
1/8 Teaspoon Baking Powder
Pinch of Salt
ΒΌ Teaspoon Vanilla Extract
3 Tablespoons Melted Butter
3 Tablespoons Milk
Directions
Step1- Take a mixing bowl and add all purpose flour, coco, sugar, baking powder, salt to it
Step2 - Mix them well and add vanilla, crushed cookies along with milk, oil
Step3 - Make batter out of it and fill it half in a mug so that the cake has some space to be fluffy
Step4 - Microwave it for 1 minute on the high power
Step5 - Remove it from microwave when the inserted knife comes out clean.
Done!!
