I'm such a fan of vegetables but aren't vegetarian so I don't have much of a repertoire of vegetarian main dishes to help with your quest. However, if it were me coming along to your party in vegetarian guise, I'd be happy to see a Chilli Con Carne (although it perhaps doesn’t match your non-veg options that well). For example, this recipe but with the mince taken out and replaced with more cannellini/pinto/etc beans and probably a pre-cooked chopped up kumara or two thrown in too.......
Chilli Con Carne
1 tbspn olive oil
1 onion, finely diced
2 garlic cloves, finely sliced
3 fresh chillies, finely diced
1 tbspn cumin
500g beef mince
1 fresh tomato, chopped
3 tbspns tomato paste
300g cooked kidney beans
1 tbspn smoked paprika
½ tspn chilli powder
2 pieces dark chocolate (e.g. 70%)
1 red capsicum, finely diced
½ cup corn kernels
1 cup red wine
zest from 1 orange (grate with the rough grate, not the fine one)
s&p (e.g. 1 tspn salt)
2 tbspns brown sugar
In a large saucepan, gently cook onions in olive oil until soft. Add garlic, chillies and cumin and cook for two minutes. Increase heat, add mince; brown. Stir in the tomato, tomato paste, beans, paprika, chilli powder, chocolate, capsicum, corn, red wine, orange zest, salt and sugar. Season to taste with s&p. With lid on, simmer on low heat for 30 minutes. Serve alongside bowls of chopped lettuce leaves and grated tasty/parmesan cheese.
Note: 1 cup of cooked kidney beans weighs 130g. A can of beans, e.g. 425g, is 60% beans, so that’s 255g of actual beans per can.
Or, this Lentil Pad Thai I invented awhile ago (photo of it on Foodlovers thread [forum.foodlovers.co.nz])
Lentil Pad Thai
1kg cooked French-style lentils (= 400g uncooked)
1 onion (130g)
1 tbspn olive oil
3 tbspns (45g) Thai green curry paste
600g stir-fry vegs: carrot 200g, broccoli 150g, cauliflower 170g, corn kernels 80g
200g pkt wide rice noodles
2 tbspns fish sauce
1 cup (250ml) coconut cream
In a large pot, heat water for cooking the noodles. In frypan, stirfry cooked lentils and onion for 2-3 minutes in oil. Add vegs and curry paste and stirfy until vegs are almost cooked and simultaneously cook the noodles for 6 minutes (in the pot of water). Then add the cooked noodles, fish sauce and coconut cream to the frypan and heat through (about 2 minutes), adding a little extra water as needed (noodle water can be used).
Alison Holst has a nice vegetarian loaf:
Carrot & Mushroom Loaf
1 medium-sized onion
1-2 cloves garlic
200g mushrooms, sliced
3 cups (400g) grated carrot
2 tbspns oil or butter
½ cup dry breadcrumbs
½ cup (50g) grated cheese
1 tspn basil
½ cup milk
¼ tspn thyme
2 eggs
black pepper
½ tspn salt
Topping: 2 tbspns dry breadcrumbs, 2 tbspns grated cheese, a dusting of paprika
Finely chop onion and garlic, then cook in a large pot in oil/butter until onion is soft. Add mushrooms and continue to cook until these have softened. Add rest of ingredients, mixing well. Pour into greased loaf tin. Sprinkle with topping ingredients. Bake at 180°C for 1 hour.
Or some vegetarian patties that they can put in the buns instead of the pulled pork, e.g.:

Or vegetarian pizza:
Base:
1¾ cup (245g) plain white flour (or 200g flour & 50g semolina flour)
1 tspn baking powder
1 tspn salt
2/3rd cup milk
¼ cup oil
Mix till it comes together, knead for 5 minutes, wrap in cling film and put in fridge until you need it. Makes 2 thin bases. 200°C 7-9 minutes.

Try looking for celia brooks brown haloumi faijita recipe. I made this when serving pulled pork for a gathering. The only problem as mentioned above was the meat eaters devoured it, had to make sure I grabbed some before it ran out. I did have wraps avail as well, which I found the ladies liked the lighter option instead of rolls, even for the pulled meats.
You could always use tofu instead, just marinade it for a few hours.

Some ideas
A quiche or tortilla assuming they eat eggs.
A selection of vege bits and pieces, cheeses, gherkins, olives, fish?, dips, crackers.
A vege risotto with smoked mushrooms and parmesan.
A big dish of roasted vegetables topped with grilled halloumi.
OR my fave - a cob loaf dip.

After all that, they didn't show up! So cross, they're sick apparently, but they didn't even have the decency to let us know they weren't coming, so we shifted furniture around to accommodate the pull out couch for them, and cooked specially for them, in a week where my best friend's husband has been diagnosed with terminal cancer and we've been stressed and upset, and not really feeling much like even having a party...Grrrrrrrrrrr.

Griz it's their loss (even though it's disappointing and difficult at the time) especially with all that you have going on & the trouble you went to. Congratulations on celebrating your 25th anniversary it's a milestone definitely worth celebrating. When we have those around us that aren't well etc...I think it's still important to celebrate any and every opportunity as they help create lots more happy memories and that's what helps get us through the tough times. Kind wishes.

Congratulations on your 25th anniversary. We take the good with the not so good and you're a better and bigger person when you rise above the niggles. When people you love are threatened with worse things in life, it puts the niggles into perspective.

As we all know how Non veg bashes your party, but even a perfect and delicious Vegetarian recipes gonna rock the party with many appraisals from over the food . I'll mention few recipes like:
