Phew I worked it out.
Seems muesli bars are much better if you take the time to really press the mixture firmly into the pan.
I was also trying to reduce the sugar content but you need quite an amount of sugar to stick the ingredients together. Hence the difficulty in getting a healthy muesli bar.
Butter is also better than oil but not sure why this would be.

I use a recipe that I found online, and the beauty of it is that it requires very little sugar as it has eggs to hold it together.
I have used sugar, agave syrup, honey or apple syrup for the sweetener and all work really well as there is so little there. I don't use bircher or pre-bought muesli as the recipe says, just a combination of rolled oats, sunflower seeds, pumpkin seeds, currants and dried apricots.
