Classroom baking ideas

I do baking once a week with 6 - 8 children aged between 6 to 9 years old. We do double batches of baking to use in a classroom pretend cafe each week. Each session is around 50mins.
I am looking for more ideas for easy quick baking recipes.
We have made include:
Truffle balls
Lolly cake
Pikelets
Muffins
Cup cakes.
Any ideas appreciated and recipes.

Anzac Slice
250g flour
300g sugar
1 cup coconut
2 cups rolled oats
1 cup sultanas
200g butter
2 tbspns golden syrup
1 tspn baking soda
4 tbspns boiling water
Mix together flour, sugar, coconut, rolled oats and sultanas. Melt butter and golden syrup. Dissolve baking soda in boiling water, add butter and golden syrup. Mix everything together and place in a slice dish and press. Bake at 180°C for approx. 20 minutes or until golden. Slice while warm.
Golden Tans
6oz butter (170g)
3oz sugar (85g)
10oz flour (285g)
Topping:
2oz butter (57g)
½ tin sweetened condensed milk
1 tbspn golden syrup
1 dspn cocoa powder
Cream butter and sugar. Add flour. Press three-quarters of the mixture into a slice tin. In a saucepan, melt topping butter and golden syrup. Stir in condensed milk and cocoa. Just heat mixture enough to blend ingredients. Pour over base.
Crumble rest of mixture on top. Bake at 180°C for 20 minutes.
Chocolate Banana Cake
50g butter
½ cup sugar
1 tspn vanilla essence
1 egg
1 cup plain flour
1 tspn baking powder
½ tspn baking soda
¼ cup milk
½ cup choc bits
1 ripe banana, mashed
Cream butter and sugar. Add vanilla, then egg. Beat well. Sift in flour, baking powder and soda. Stir just to mix. Add milk, choc bits and mashed banana. Stir just to mix. Spread evenly in prepared cake tin. Bake at 180°C for 30 minutes.
Orange Muffins
1-2 tangelos or oranges or mandarins, weighing 200g
1 large egg
½ cup milk
100g melted butter
1½ cups flour
1 cup sugar
1 tspn baking powder
1 tspn baking soda
Use all of the fruit – skin, flesh and juice. Cut it into pieces and put it all into a food processor. Add sugar and process until finely chopped. Add egg, milk and melted butter and whisk away. Measure dry ingredients into a bowl and tip in the liquid mixture from the food processor. Combine but don’t overmix. Spoon into greased muffin pans and bake at 200°C for 12-14 minutes. Makes 12.
Alison Holst has an Easter Muffin recipe which tastes a lot like Hot Cross Buns without all the effort. See it here at:

Baking includes pastry items so someone might be able to give you a little savouries recipe or sausage roll recipe, for example. Also, scones. The Edmonds book scone recipe (basic recipe given, plus additions to make them cheese or date scones, etc) is an excellent scone recipe to use.

Basic scones and variations...Date, sultana, cheese, pinwheels etc

You could make a couple of simpler things in one session....some suggestions are:
Eggs in various forms: scrambled, poached. Or bacon and eggs.
Lemon drink...squeezing, grating, adding sugar, boiling..cooling. simple but has a few steps in the process to learn a few skills.
Pizza.....making a pastry base and chopping, grating various vege and cheese
toasted sandwiches
Ordinary sandwiches with various fillings.
Baked apples and custard
stewing fruit is a skill.
Making Fruit salad
Eggs in various forms: scrambled, poached. Or bacon and eggs.

Home made mini pizzas - you don't even need to leave the dough to prove. Seriously skip this step, all I really noticed was the pizzas were crispier.
I do this with my kids all the time and its great showing them how to make the dough and mini ones mean they can customise them and just makes it more manageable.
Any leftover dough can be frozen.
Here is a recipe my sister and I use, clearly the toppings would be different for the kids though.
