I was wondering whether you may be meaning arancini, the Italian version with molten mozzarella in the centre. I love arancini and once decided to make some, however, unless I was making them for more than the two of us I decided that one of my favourite Italian restaurants would do a better job.

I have a recipe for a type of rice ball - here you go
Cheddar cheese and spinach rice balls
Makes 15 balls
Ingredients
2 tablespoons olive oil for sauteing
2 shallots or 1 small onion, finely diced
2 cups fresh baby spinach (or regular spinach), chopped (optional)
2 egg whites
2 cups white rice, cooked
1/2 cup Panko breadcrumbs (or regular breadcrumbs)
1 1/2 cup tasty cheddar, grated
Salt and pepper
Cooking spray
Method
1. Preheat oven to 200C
2. In a frying pan saute the chopped shallots or onions until soft. Add the chopped spinach and cook until wilted and soft.
3. In a large bowl whisk the egg whites until combined
4. Add the cooked rice, breadcrumbs and grated cheese. Mix through.
4. Add the spinach and shallots and combine.
5. Season with salt and pepper.
6. With clean hands, form bite size balls and place each ball onto baking paper.
7. Spray lightly with cooking oil.
8. Bake for 15-20 minutes until crispy and golden checking the balls and giving the pan a gentle shake or turn the balls to brown both sides evenly.
9. Serve with a good quality tangy tomato sauce.
Tip
Flour your hands between rolling each ball to stop them sticking to your hands.
