Mutton Birds

Ive been given a mutton bird - anyone got any recipes. Id like to do some sort of curry, rather than the normal boil up type theme - presume I have to boil all the salt out of it, shred the meat and away I go. Any ideas????? Ive googled but not much luck - I presume the Aussie Mutton bird is not salty like ours because they dont seem to do the whole boiling thing.

Try soaking it in fresh water, changing the water 2 or 3 times every hour till it no longer tastes over-salty. That's what I do with my corned beef from the butcher because I'm not a lover of salt but I am of corned beef. It makes it very palatable.
