My partners BIG 40th is coming up and this is his favourite cake - anyone got a tried and tested good recipe for this - or can you point me to the right place?

I wouldn't mind modernising it a bit - it always looks a bit old fashioned

so any ideas would be appreciated also!

A lot of recipes use instant coffee - I wonder if it tastes better with espresso?

What about a praline brittle on the top in big boy shards and served with a rich clotted cream or Marscapone and espressos.
Or a filling of marscapone and drunken cherries?
