Lemon muffins

We are having a morning tea for cancer. I'm wondering if lemon muffins can be successfully frozen, also the recent recipe of gingerbread that was discussed.
I'm not too keen on frozen baking but will have to do it on this occasion.

Val, there is no reason why you couldn't freeze both of those. I freeze muffins of all kinds regularly and a quick zap in the microwave takes them from frozen to fresh warm status. By the way, the Phillip Johnson gingerbread recipe mentioned recently is a winner.

I often freeze baking, particularly the type of things that need to be eaten reasonably fresh, such as scones and muffins. If needed immediately then that zap in the microwave that Barbara Anne mentioned, and they taste just like freshly made.
If time allows I let them thaw naturally.

This morning I made both and have put in the freezer. I read where you should freeze cup cakes first before wrapping, do did this.thanks for your answers.
