Christmas Treats

It is that time of year again when I am thinking about edible Christmas gifts and sweet treats.

A friend of mine served Crunchie, Peanut Clusters at a party last week, they were completely moreish and I have just made some for a photo shoot tomorrow.
Any great ideas from you?

I always think homemade Marshmallow looks extra special giving as a Christmas gift wrapped in a see through bag with a little colourful christmasy tie.

Some I have received and enjoyed were
Vanilla Rum Marshmallow
Salted Caramel Marshmallow

Christmas Bark is always moreish too - these would be my favs
Chocolate, Cranberry and Roast Almond
Gingerbread biscuit bark
Chocolate, nuts and chia seeds

I make chocolate "things" - tempered dark chocolate with toasted slivered almonds, toasted long thread coconut and cranberries, spooned into lumps on a tray. Also dark chocolate bark, again tempered, with various toppings, crystalised ginger, nuts, cranberries etc, and I also do crushed peppermint candy cane - always a huge hit with my boys and father ;-)

Biscotti with almonds, orange zest and cranberry (seeing a theme here? I really like the tart taste of cranberries).

Ingrid when you make gingerbread bark do you make gingerbread shapes and then crush some of them in the food processor for sprinkling over the chocolate?

Interestingly I have just perfected a marshmallow recipe which is due to be posted shortly.
I just made vanilla.

I like making jam as part of the small Christmas gifts I do, and have just made some strawberry & rhubarb and making dried apricot & pineapple. I may also make some shortbread (not the gritty one), and fruit mince.
Love the sound of the marshmallow IngridO, and looking forward to checking out your recipe Helen - might have to give that a go instead of shortbread.

I always make biscotti, shortbread and a version of truffles which could be a South American type made with condensed milk. Presentation always looks horrible as I vacuum seal everything so they last right through the school holidays and are easier to transport.

Panforte is always a goodie as is Russian fudge
Ive made the fudge in the past - in my microwave, its always worked out great.


I found this from a previous FOODLOVERS post

1 cup sugar
100g butter
1/4 cup golden syrup
400g tin sweetened condensed milk
1 tsp vanilla

Spray a square cake tin and put aside. Put sugar in microwave proof bowl/jug. Add chopped butter, golden syrup and condensed milk and microwave on high for 10 mins, stirring every 2 mins. After cooking sit on bench for 2mins to cool. Stir in vanilla and beat until thicker. Pour into greased tin, when cool cut into squares.
