Gooey Broccoli - disaster number 1

What went wrong?
I blanched the broccoli and plunged it in to cold water. I then left it in plastic containers to fully cool (I probably didnt drain it as well as I could have). I then left it over night because I forgot about it.
The next morning I woke up to a stinky manure like smell and the broccoli was gooey.
I couldnt stomach it so sadly threw it away.
Im curious - what happened and why?

I wanted to have it cold in my fridge to use for salads or pan fry the next evening.
Im also addicted to having it pan fried with garlic/chilli and a splash of soy or oyster sauce.
Im trying to be really organised with having my fridge full of things like roasted aubergine, sweet potato, broccoli or cauliflower so I can throw together with sweet cos lettuce and cold chicken/meat as Im out and about at scooter parks, beaches and playgrounds this summer.

When I prepare my broccoli like that I drop into iced water then leave it to air dry in a colander until it's dry. I then dry it in a clean tea towel and put it in a large zip lock bag. For the first day in the fridge I leave the bag open a bit so it can continue drying out. I think having it completely dry is the secret.
