Meals should be no problem if you steer clear of processed/convenience foods and cook with veges, herbs, meat, fish and eggs. Use olive oil or peanut oil as cooking fats rather than butter. Be careful with spices as these can be contaminated with gluten - best to buy labelled spices rather than from bulk bins and the former are required to state ingredients. Thicken sauces by reduction instead of with flour (or egg yolks when appropriate).
As for baking and snacks - are these really necessary? If you really feel the need to have something at the ready you could make hummus or baba ganoush and serve with raw vegetable slices or gluten-free rice crackers.
And I suggest you ask your friend for ideas as he/she presumably has been living under these restrictions.

Just a question regarding an allergy to nuts, would oil made from any nuts, e.g peanuts, walnut or almond cause a problem?
I agree with TPANDAV regarding baking and snacks, for gluten free friends I tend to offer either gluten free crackers or roasted almonds (but not in your case, Nozzie), roasted chickpeas, olives etc if required. Generally, meals would be meat, fish and vegetables, hot or cold.
I have one recipe that could be used but you'd need to check off all the ingredients in case I have overlooked anything vital.

Roast meat and vege served with fruit and coconut cream could be very nice (check coconut is okay).

Curries indi×n are probably easy to make gluten dairy and nut free. Stir fries again probably easy to negotiate re allergies. Re snacks just keep a bowl of fruit available apples pears plums etc, should the need for a snack arise, or keep Not cold weather but soups are another easy thing to whip up and are very adaptable. Bbq you could do kebabs skewer style and marinade veggies meat or tofu... with salads.

In the past I have bent over backwards to accomodate vegans and vegetarians when they have come to our place for dinner. I research until I'm blue in the face and my fare is always received with ravenous delight. We are invited back and they are aware of my problems with soy products,blue cheese and fresh cream. I am fairly confident cheeses or cream will not be served but better safe than sorry.
Sadly, I am always confronted with soy products including those horrible green soy beans in a pod you have to open up and eat after they have been thawed out.I have never ever eaten a nice meal made by a vegetarian or vegan that accomodates my dietary requirements. I think this is extremely rude. I do my best for them but they make no effort for me. I don't expect them to cook a chop or steak but surely they could do better than a bowl of rice, and vegan bobotie which I have to tell you is the pits.

I love all vegetables Karen but seldom am I served any that resemble vegetables and the only salad I've ever had offered is from a supermarket bag of mesclun with a bottle of oil free dressing. Vegetables are nearly always the star of my meals as well although I am omnivorous but a vegetarian bowl can be a thing of beauty and great enjoyment. I don't really mind that they have no interest in making a nice meal in return for my hospitality but I do mind when my simple (to me) requests are completely ignored.
