Marylew I find the flavour quite different to fresh garlic and so prefer to use the latter.
A friend brought me a small bag of frozen peeled garlic which I must say is good for those days when you really want to hurry but unless the cloves are particularly small then I am pretty happy with fresh.

I never use it, its different and I don't like it.
I have however chopped up a heap of garlic and mixed it in butter and made butter and herb logs that I have frozen for just that time when you really want garlic bread but cant be bothered chopping it all up.
Its a great alternative.

I grow my own garlic and by this time of year, the rocamboles and marbled purple stripes have started to sprout with the root nodules swelling at the base of the cloves. I peel, crush and dehydrate them to use in marinades, dressings and when mixed with softened butter, the garlic rehydrates and is almost indistinguishable from fresh. Happy to share a few tablespoons with anyone who wants to try some - send me a pm with your address

Not quite on topic but ...
It really irks me to see tele cooks ~ Karen Martine of Better Homes & Gardens being a frequent offender ~ of tossing unpeeled garlic cloves into pots or trays. The thought of possibly eating those papery husks fills me with horror.
I find Jamie Oliver's habit of crushing unpeeled garlic cloves in his squeezy-style crusher more acceptable as I think the moisture of the garlic would push through the peel.
Having for some time grated garlic on a fine grater, I have recently returned to using my squeezy crusher.
But for me, the garlic is always peeled.

Meganp thank you for your kind offer,I don't use a lot of garlic which is why I thought a jar would last forever and just keep fresh.I now know not to buy it.I use fresh garlic in my casseroles etc.but I don't make my own dressings.I agree with you Sueblue, the papery husks idea wouldn't be a good idea unless it all comes out whole.I never crush my garlic with a blade I do use Jamie Oliver's way.

I find the citric acid that is used to preserve jarred garlic changes the flavour completely. I always have garlic powder on hand as my lazy garlic alternative. I find the ease and flavour perfect, especially sprinkled on buttered toast with salt and pepper. The garlic powder I get from my local bulk food shop is a really fine powder. Gregg's garlic powder is coarser but doesn't clump. I think I prefer the fine powder one, just because it coats better as a popcorn flavouring or in a dry rub.
