Does anyone know where I can get Monterey Jack Cheese in Auckland?

If you can't find it, I personally just substitute Mainland Mild Cheddar (the green block) or Edam. Monterey Jack has such a very mild flavour that I don't think you'd be noticing a huge difference if you didn't have it. Colby is possibly a bit soft, but has a comparable flavour (IMO at least). Really could you probably use just about any supermarket NZ cheese with the exception of Tasty.

I was curious about this cheese, Ive often seen it in American recipe books.

It sounds like a colby cheese to me, smooth with not much flavour.

I agree with Jenna - most supermarket cheeses other than tasty should do the trick.
