Finger food ideas for road trip

Hi and Merry Christmas and a Happy New Year to you all!
Later this month my daughter and her partner are picking up a new car in Auckland, driving to us in the Wairarapa and then the next day driving to Wellington, hopping on the ferry and then driving all the way to Dunedin in one day (they were only able to get 2 days leave). I thought I'd put together a picnic basket for them to take full of yummy food to keep them sustained on the second day of the trip. I'd like ideas and recipes please for stuff that can be easily eaten whilst driving (they will be sharing the driving but they won't be keen to stop to eat). They'll be leaving here at about 5am so I'm wanting to pack something for breakfast, morning tea, lunch, afternoon tea and a later snack as I don't imagine they'll get back home until quite late. I'm going to pack it all into a chiller bag with frozen drinks to keep everything cool. So, ideas would be great please!

Just a tip for the travellers: I only found out a couple of weeks ago that eating while driving is illegal, for the same reasons that using your phone is: it can be a distraction for the driver. Apart from that, they should stop at least every 4 hours to have a stretch and a 10-15 minute break. Driving for long periods without a break can be a danger to other road users as well as themselves. Please tell them to take care.

It isn't actually illegal to 'eat and drive' . The NZ Road Code states that it is a distraction that should be avoided or minimised.
I would therefore chose foods that are small finger foods that can be popped into the mouth in one hit and not sticky, ie courgette and/or mussell fritters, small bacon and egg pies, self crusting quiche but mini ones done in muffin pans, definitely sweets to keep the blood sugar up, so something like lolly cake? Mini muffins. Remember butterfly cakes?

My staples for travelling are high protein foods such as frittata (the Italian kind, not the self-crusting kind), meatballs, chicken thighs cooked with Ras el Hanout, nuts, dark chocolate and whatever fruit is in season. Plus plenty of water. None of these need careful refrigeration. A container of home made coleslaw keeps well - just pack a couple of plastic forks to eat it with.
A high protein breakfast is particularly important, and a frittata made with bacon, spinach, cheese and tomatoes is good for this. Let me know if you want a recipe.
I differ from Irene in that I don't think sugary foods are a good idea because after a short energy boost there will be an energy crash and loss of concentration. I think it is better to keep up constant stamina with protein and fat.
And I agree with the other people - take regular breaks and eat then, not while driving.

This is stretching the concept of frittata a little, but it is a low-carb classic, and I make it often for travelling.
Breakfast Frittata
serves 3 - 4
150 g chopped bacon
100g chopped mushrooms
200 g cooked spinach, chopped & well drained
1 cup of grated cheese - gruyère, tasty cheddar, aged gouda
10 eggs
pepper
salt
sliced tomato
Line a baking dish with non stick paper, then spread over bacon & mushrooms (this helps hold the sides of the paper out). Mix eggs in a bowl to combine the yolks & whites but do not whisk, then add salt, pepper, spinach & cheese. Mix well then pour over the bacon & mushrooms. Spread out evenly & top with sliced tomato.
Bake around 180 degrees until just set. Serve room temperature. This will keep in the fridge for several days.

What about old fashioned fresh bread sandwiches and asparagus rolls. Or even rolls made with smoked salmon pate instead of asparagus. Tasty, delicious, high protein (asparagus), and easy to eat. Regular changes of drivers will allow time for eating. I recently made egg sandwiches (with lots of filling) and asparagus rolls as pre concert food so we weren’t obliged to eat the awful stuff for sale, and we were all surprised at how delicious they were. I think a picnic bag is a lovely idea. It will save them time and money, but most of all will make them feel special and loved. Janet

I've made this savoury muffin recipe a few times: Savoury Muffins. I used 2.5C vege mix, mainly grated carrot and courgette, spinach, onion. I also added a little powdered stock and topped the muffins (before cooking) with Thai Sweet Chilli Sauce or Tomato Relish.
