Every time we pass through Opotiki, we stop at the Two Fish Cafe. If it’s lunchtime I can’t resist the seafood chowder, which is the best ever. At other times I have a piece of their lemon and raspberry slice. I’m thinking the base is a normal shortcake, topped with raspberries and then some sort of lemon sauce topping everything so it slightly melts into the base. Any ideas for a recipe? Thanks, Janet

The blueberry and lemon oaty slice recipe (in latest recipes) looks like it could be what you are looking for. Just use raspberries instead of blueberries. regards Gran

Janet I would trying adding raspberries to this Sticky Lemon Slice.. It has a shortcake base and then a lemon topping, the raspberries in there would be lovely I think.
