Chilli Jelly Recipe wanted

Years ago (maybe 15) I used to make Chilli Jelly. It was a clear Jelly with no bits, although I used to pop a whole chilli in the jar for looks. I thought I’d make some this year, went to the book I “knew” the recipe was in and oops, failing memory. I’ve done a search through my books and I can’t find it anywhere. I made it for a few years so obviously had the recipe somewhere. Does anyone have a recipe. Google seems to only find the puréed version (not a clear Jelly). Thanks, Janet

If I wanted to make a perfectly clear chilli jelly I would make a tart fruit jelly such as crab apple or quince and when cooking the fruit add a large number of roughly chopped hot chillies. Proceed in the usual way - strain overnight through a jelly bag etc. As to the quantity of chillies, it would depend on what kind you have available. The chillies shouldn't affect the setting as long as you use a tart high-pectin fruit.

TPANDAV that's what I thought too, although I did wonder about making a recipe that had all the bits in and just putting them through a bag, but I must have had a clear recipe (don't remember using anything other than (maybe) apples). It's just really annoying that I can't find it. I have the Eat your Books app and nothing has come up in that so I'm thinking it must be in an old book. When I've got time I shall go through them. We're going away in three weeks, and I really should be getting other jobs done!
