Mini quiches

I am newish to making mini quiches and would like to try making them again. Has someone got a tasty recipe to share, please? We don’t eat bacon and I would prefer to make them crustless because the ones I have tried making had a pastry base and they did not turn out well. I have mini muffin tins and the usual muffin tins. I don’t feel confident getting the egg to cream ratio right. I bet there are some superb mini quiche makers here. I would like to serve them to have with drinks. What else do you serve with wine? We will be getting new neighbours soon and I thought It would be nice to ask them over together with another neighbour couple - so just six of us. I would like to keep it simple but tasty. Also, I thought 4ish would be a good time. Too early perhaps? Many thanks for your thoughts and help.

Hi Chris,If you go to scrummylane.com they have mini quiche lorraine.It does have bacon in the recipe but would be as tasty without.You need to scroll right down to the end to get the exact weights etc, but it tells you how to make in advance and freeze them.I haven't made them yet but intend to for friends birthday coming up.Sorry I don't know how to share the site as others do.I am lucky to get this far not computer savvy at all.

Chris, heres a recipe for Crustless "Quiche" that I've used several times. It's otherwise known as Impossible Pie if you want to Google it for various methods and flavours
Crustless Quiche
Ingredients
1 cup flour
1 teaspoon baking powder
½ teaspoon rosemary*(see below)
½ teaspoon thyme
Salt and pepper
1 ½ Cups of milk
4 eggs
3 tablespoons oil
2 cups of filling **(see below) cut into bite size pieces
1 ½ cups of grated cheese
Directions
Heat oven to 180ºC.
Sift flour, baking powder and salt and pepper into a large bowl. Add the rosemary and thyme and stir with a wooden spoon. Add one cup of the milk bit by bit, stirring well to make a smooth batter.
Add the rest of the milk, the eggs and oil and beat well, ensuring there are no lumps.
Add 1 cup of the cheese and vegetables and stir. Pour into a square silicone baking pan.
Top with the last ½ cup of cheese.
Bake for 40 minutes till set and top is golden.
*Alternative Flavour Cominations
parsley, oregano, mint and basil; lemon and capers; tomato and eggplant; parmesan cheese
onion and garlic; walnuts and pine nuts; anchovies; coriander seeds
**Suggested fillings (any combination is nice!):
Onion, broccoli, tomato, courgettes, grated carrot, whole-kernel corn. Tuna or salmon. Leek & Mushroom. Leftover cold, cooked meats. Leftover roasted vegetables. Lightly fried and cooled bacon & onion.

Just a word of warning, Chris. Real quiche is egg-based and therefore has a moist texture, hence the need for a pastry base to contain it. This 'Crustless Quiche' is more of a cakey consistency, not moist at all.
I daresay you could adjust the cooking temperature and times to bake them in individual dishes, but it would need some experimentation to get it right, I should think.

Am just posting this self crusting ''quiche' recipe. I actually sourced it many years ago from one of the FL ladies, but unfortunately can't remember who to thank sorry. But I have made this as a whole and as mini quiches and I vary the vegies as to what I have in the house. I like it as it has minimal flour
1 lg zucchini, finely sliced
1 c milk
1 1/2 c cheese, grated
1/2 c sour cream
3 spring onion, finely sliced
4 eggs, lightly beaten
1/4 c plain flour
2 med tomato, sliced
1 clove garlic, crushed
Preheat oven to 180 celsius. Mix vegies, milk, grated cheese, sour cream, eggs & flour together. Pour into a greased quiche dish, and top with tomatoes, olives & parmesan cheese. Bake 45mins until golden brown

Chris, you also asked what else do you serve with wine. Let's not mention the old joke about "more wine".
You could serve olives, blinis, crostini, cheese straws (simply made with store bought flaky pastry, thawedand sprinkled with grated tasty cheese, a hot oven for around 15 minutes) or even some nice crackers with cheese/s.
I have a recipe from Jo Seagar for Bite-sized Roast Pepper Quiche. If you wish I can PM the recipe to you,
it is fairly standard with 3 eggs and 3/4 cup of cream and uses roasted red peppers but no bacon or ham. I hesitate to just copy the recipe here in case of copyright. I have made them before and they are quite yummy.

Marnie, I would appreciate
a PM with the recipe - no urgency. I often bake cheese biscuits which people seem t o like and I also do blinis with creme fraiche or cream cheese with smoked salmon. I thought of mini quiches to have something warmish. I’ve seen various small samosas and other small bites in the frozen food section of my supermarket but just about everything in that line comes from Shore Mariner and I won’t buy food grown or produced in China.
