These vege muffins are always good. You can omit the bacon if you want them vegetarian, but add a little more butter.
Bacon & Vege Muffins
24 little/12 med.
4 rashers of bacon (about 120g)
75g butter
2 eggs
1 c. milk/yoghurt/buttermilk
2 c. white flour
4 tsp baking powder
½ tsp salt
2 tsp sugar
pinch cayenne
1 c. grated cheese – feta, gruyere, gouda
4 spring onions chopped
1 c. grated carrot
1 c. grated zucchini
½ c. chopped parsley (or marjoram)
Set oven to 200º C. Grease muffin tins very well.
Fry bacon until crisp, reserve fat, chop finely.
Melt butter and mix with bacon, fat, eggs & milk. Add cheese & veges.
Sift flour, b.p., salt, sugar & cayenne.
Mix all together until only just combined.
Bake 15 min.
Will freeze well.

Another highly recommended: [www.taste.com.au] I sub ham or bacon for the mortadella as I can't always find it here.

Here's mine- which I have been making for over 25 years.
SAVOURY MUFFINS
2C flour
2T very finely chopped onion
3t baking powder
½c cream style sweetcorn
½t salt
3T butter
1C grated cheese
2 rashers bacon (or leave out)
1T very finely chopped red or green pepper
2T very finely chopped celery
1T grated parmesan cheese
2 eggs
¾ c milk
Cayenne pepper
Sift flour, baking powder, salt and cayenne into a mixing bowl. Stir in the cheese. De rind and finely chop the bacon. Add the bacon, chopped pepper, celery, onion and sweetcorn. Stir to mix through.
Melt the butter. Add to sifted ingredients. Lightly beat eggs and milk together. Add to the bowl and mix lightly just to combine. Do not over mix. Spoon mixture into 9 [less] greased deep muffin pans. Sprinkle with parmesan.
Bake at 220°C for about 10 minutes or until well risen and golden. Leave in tin for about 5 minutes before turning out.
