Pikelets

I am going to a sewing workshop with friends today and suggested to the hostess that I bring pikelets for the shared morning tea. Yes please she said straight away.
I know we have talked about old favourites before but pikelets bring back such happy memories - one of the earliest cooking lessons with the family. When a child could safely interact with a hot frying pan they were there making pikelets in the shape of teddies, their initials, huge ones, tiny ones and so on. And then devoured before they had even completely cooled down!
My recipe is one of those passed down on the back of an old envelope. Still works a treat though.
I'm smiling as I write this as I know my friends will say “Haven't had pikelets for years”

In a bowl mix: 2 cups flour, 5 dessert spoons sugar, 1 tsp salt. Break in 2 eggs and stir, add enough milk (about a cup) to make a thick batter Leave to sit for 3/4 to 1 hour.
Then add 2 level tsp Cream of Tartar and 1 level tsp Baking Soda. Stir and cook. Drop spoonfuls off the end of the spoon to make nice round pikelets, turn when the bubbles come to the surface. Then leave to cool between a folded tea towel set on a cake rack.
Between batches, do not keep the spoon in the mixture as this encourages the raising agents to work faster.
Enjoy.
Remembering my Aunt Ivy who gave me the recipe - she would be about 112 now if she was alive!

I also have the pikelet recipe Ali posted. My Mum used to use the same recipe. From memory it was printed on the container of either the Cream of Tartar or the Baking Soda .
Thanks for the reminder of the tip about the shape of the pikelets, Lorna. I had forgotten all about that.

I also make pikelets for my grandchildren - their favourite is chocolate chip pikelets , which I made for them yesterday- just add half a cup of chocolate chips to your favourite recipe (my recipe has 3 tabs sugar). When I was a child my best friend's mum made banana pikelets which I loved.
