Cristal Bread

I have been trying to make Catalan Cristal Bread (Pan de Cristal)

The loaf has a thin crispy crust with many large holes.
Hydration is high…around 90% according to some recipes


However to find a recipe and execute it to look like the pinterest image is proving difficult

Any Ideas, please

I haven't made it, but here is a link to a detailed recipe. I think you would need the special grade of flour.

Thank you, TPandav for your suggestion about special grade flour and of course the site. After a number of attempts I think that the bread requires a strong bread flour

Looking at the link TPANDAV provided, that bread seems almost impossible to execute without a great deal of trouble and angst. I enjoy a challenge but this one seems a loaf too far!

I haven't made this particular bread, but from my sourdough experience, with regard to the strong flour I actually find the opposite - the stronger the flour, the smaller the holes are.

To get big holes in bread you need a strong flour, a well-hydrated dough (I.e. soft and wet) and a lot of kneading.
