On this foodlovers thread [forum.foodlovers.co.nz] I posted a recipe for Dominion Loaf using lentils instead of beef mince.
I've since changed the original recipe (both the meat version and the lentil version) by removing the half cup of milk and replacing it with 4 tablespoons of tomato paste. This change makes a MUCH BETTER loaf, both in texture and flavour.
Yesterday I finally got around to making a BEAN version of the loaf. I cooked some beans myself, but canned beans could be used. I substituted 500g of cooked haricot beans for the 500g beef mince. It was very successful. The carnivorous male in the house happily ate it for lunch and declared it "very good". Photo attached. I did make one other unintended change - I forgot I needed an apple and didn't have one so put 180g of buttercup squash/pumpkin in instead. In the past I've also successfully substituted zucchini for the apple...
Here's the recipe again, for ease:
1 onion (approx 130g)
1 small carrot (approx 80g)
1 tart apple (approx 180g)
2 cloves garlic
1 egg
4 tbspns tomato paste
1 tbspn (15ml) soy sauce
1-2 tspns (2-4g) curry powder
1 tspn sugar
½ tspn salt
2 sprigs parsley
500g cooked beans (e.g. haricot, pinto, kidney, etc)
1 cup (90g) rolled oats
Cut onion, carrot and apple into quarters and place in food processor. Add garlic, egg, tomato paste, soy sauce, curry powder, sugar, salt and parsley and process all until finely and evenly chopped. Remove and place in a bowl. Add beans and rolled oats and stir to combine. Press mixture into a loaf tin and bake at 180°C for one hour.
Note: if you're using canned beans, one 400g can of beans is 60% beans, which means there are 240g of beans in one can (the rest of the canned weight - 160g - is liquid), so you'll need to buy two cans of beans to give you 480g of beans, which is close enough to the 500g needed for the recipe.

This looks lovely, if you do the lentil one again can you post a photo of that - it probably looks even more like mince. Good to know about the improvements/changes too. A friend of mine is a vegetarian but she's one of those who eat salmon and tuna especially in sushi, prawns and god knows what else....I suppose shes a Pescatarian. It's good to have some nice recipes to hand. I wonder if you could make this mixture into a BBQ patty for burgers?

Just looked at your original recipe and I see they are brown lentils, in the photo they have kept quite bit of texture which is nice. I'm going to try the mixture as burgers - those vegetarian sausages and burgers you buy from the supermarket are really expensive and goodness knows whats in them. I will report back My friend is coming over next Friday to indulge in day drinking and now burgers!

Yes, I used brown lentils. I have a note on the recipe that you could also use "Whole Green Lentils (not French-style)". I was worried the French-style ones wouldn't help hold the mixture together enough although, now the half cup of milk's been taken away, an experiment with French-style might happen at some future point.

It's absolutely, totally delicious cold. I was just thinking, as I ate a cold piece the other day, it would make a great picnic food or lunchbox filler..
