Bran Muffins, do you have a really good recipe?

I really like a good bran muffin but am not sure my current recipe is as good as it gets.
Do you make them and if so do you have a recipe that you are able to share?
I like them when they have a crunchy outer and an inside that is moist get with good texture.
I know the moisture will come from the addition of dried or fresh fruit.
Most recipes have on a little butter, some have an egg, some don't. Some are low in sugar but it is the sugar that helps to create the golden crust on the outside so I am happy with sugar.
Any recipe suggestions?

I have one from a very old recipe book '101 ways with food' - an un-dated Wilson and Horton publication probably from the 1950s or 60s. I tried to check the date for copyright reasons, but a Google search under the title came up with nothing. If you're happy for me to post the recipe, I will!

Editing this - the book is called '1001 ways with food' - but that didn't come up in a Google search either...

Bran Muffins

2.5 cups flour
4 cups Bran
1 tsp Salt
2.5 tsps Baking Soda
1.5 cups Sugar
Half a cup of oil - I use rice bran
2 cups Milk
2 Eggs
Half a cup of Sultanas

Mix dry ingredients , add sultanas.

Beat eggs, add milk & oil.

Add to dry ingredients and mix together lightly.

Bake 10 - 12 mins @ 200deg. Mixture will keep 5 weeks in the fridge. Stir before using.

I use muffin papers and it keeps the pan a lot cleaner.

This is mine:

Bran Muffins

2 tbsps butter
1/2 cup sugar
1 egg
1 tsp cinnamon
1/2 tsp baking soda
1 tsp baking powder
1/2 cup milk
1 cup sultanas
1 cup flour
1 tbsp golden syrup
1 cup bran

Cream butter and sugar, add golden syrup and egg. Dissolve baking soda in warmed milk. Sift flour, cinnamon and baking powder, add bran and stir in with sultanas. Lastly add milk. Bake in greased muffin pans in moderate oven. Makes about 10.

This is my one & i like that it is all put intogether, i don't use fruit as hubby isn't keen.
1 large cup flour
1 tsp Baking Powder
1/2 tsp salt
1 1/2 cups bran
1/4 cup sugar
1 egg
1 level tspn soda
Approx 1 cup milk
1 heaped tbs golden syrup
1 tbs butter
Sift all except bran & sugar then add them. Beat egg well add soda with the milk ( I warm the milk, syrup, butter & add soda to it ) then mix into dry ingred.With the egg. Stir quickly just until flour is blended, don't over beat.
Put into cold patty tins
Bake 220oC 12-15 mins.

Yum. I love a good bran muffin, but hadn't thought of them for ages! Helen, would you please post your results with the different recipes?

Yes absolutely Jenna, I have been trialling using frozen feijioas in them.
My recipe will be up in a few days. Earlier than the feijoas will be ready. smiling smiley

You have got me going Helen, made bran muffins this morning, loaded the tablespoon up well over brimming & oh just delicious.one thing do NOT overcook, betters slightly under if anything.

Ingredients

1 cup – water
2 cup – All-Bran cereal
1/four cup – butter, unsalted
1/4 cup – applesauce, unsweetened
1 cup – sugar
2 big – egg
2 cup – buttermilk
2 half tsp – baking soda
1 half cup – flour, entire wheat
1 cup – flour, all-motive
half teaspoon – salt
1 cup – All-Bran cereal

Directions

Preheat oven to four hundred tiers F.
Boil 1 cup of water.
Mix boiling water and a pair of cups All Bran cereal collectively in a bowl. Set aside.
Mix together butter, sugar, applesauce and eggs.
Add buttermilk.
Then upload baking soda, flours, and salt.
Add the All Bran and water mixture.
Lastly, add 1 cup of dry All Bran cereal. Mix till combined.
Grease a mini-muffin or regular muffin tin.
Fill every tin three/4 of the way complete of batter.
Bake for 10-12 minutes for mini cakes and thirteen-15 minutes for normal length truffles or till the cakes bounce back.

Naughty you but it was Helen that got me going but i actually had them on my mind she just inspired me. I always jave to do a double batch as the grandies love them too.
