Granny's Coconut Cake

I need to get the side bar here adjusted so that latest recipes show up again.
Last week I made a coconut cake that my lovely Mother-in-law used to make and everyone loved it, I have since made it another 2 times as different family members contacting me reminiscing.
My son Freddie was only 4 when Granny died and I smile as I see him devouring the cake, saying "Man this is a great cake".

There is nothing frugal about it, just a deliciously moist cake.
Her upside down cake is next on the to make and photograph list.
The topping is Carmel with walnuts.

Your Story is really touching and I also lost my grandmom in April. I really miss her.
