I came across another recipe today where you coat the meat in flour before browning. It's something I refuse to do because:
a) It's all to easy to end up achieving burnt flour and little else. Not desirable at all.
b) It prevents the MEAT from browning and caramelising, which is the whole point of browning.
I decided to look up what Google thinks about it:

Weird. I tend to flour meat if I'm not browning it and never if I am, for the exact reasons you mention, J1. I have never seen a recipe that calls for flouring, then browning, meat -- how totally wonky! Often I will add a spoon of flour to the browned meat if is a braise or something, so the sauce can thicken -- but that is after browning, not before.
