Speaking of avocados, I was lucky to get a bag of them off a friends tree in Tauranga - they ripened quickly and I couldnt eat them all at once. I pureed them with lemon juice and chilli flakes and bagged it into snaplock bags - one per bag.
I took a bag out in the morning and took it to work with veg sticks as Im on a bit of a health kick ;-)
The avocado was AMAZING!
The next day I was looking forward to the same snack with the other half that Id left in the fridge BUT it turned a horrible brown colour and was very unappealing.

Vanessa, you could probably avoid the brown discolouration by ensuring you squeeze out every last bit of oxygen from the snap-lock bag before putting it in the fridge. Maybe my taste buds are not that discerning because I've eaten a left-over half of avocado that had brown discolouration and I couldn't taste any difference. I mashed and mixed it all together so I couldn't see the brown and ate it quite happily.

I have read on the internet that if you pour a small amount of cold water over mashed avacado it will keep it's lovely green colour for up to 3 days. When ready to use, pour off the water and stir to refresh. Use a small bowl for storing then drain and transfer to a snaplock bag when ready to take to work. Could be worth a try?

Glad you are enjoying them. We are eating the last two now and although they have been in the fridge for a while because it’s just two of us, they are still nice. Only one had a brown spot that I liken to a plug and that came out w it’s the skin. My new delivery arrived on Thursday. The first ones that are showing a change in colour will go into the vegetable bin in the fridge for later use.
