Somehow I ended up with more avocados than we can manage so decided to make ice cream. It hasn't appealed to me particularly but this is delicious!
Here is what I did: I used two very large ripe avocados and put them in the Vitamix with the zest and juice of a VERY juicy green lime (expensive!), a slosh of rum, a big pinch of sea salt, and about three tablespoons of Viper's Bugloss Honey, and a squeeze of vanilla bean paste. Zapped all that, then tasting it I decided it wasn't quite sweet enough. So I sweetened the 500mls of cream with a tablespoon of icing sugar which made it more stable when beaten. Folded the avo mixture and cream together and poured into two containers which I then struggled to find room for in my inadequate freezer space. Success though! And worth it. A weekend treat.

Gosh that sounds delicious. Nice to have a recipe that doesn’t require an ice cream machine. If you don’t have much freezer space, then best to gobble it up don’t you think!

Sounds great Stephanie. How much is a "slosh" of rum? a tablespoonful?

Probably two, TPANDAV! I couldn't detect the taste, but my taste buds are not as discerning as they once were. Last night after four hours freezing the smaller container served beautifully. Today I have checked and the bigger container is too hard and a bit icy. It'll need a short zap in the microwave before serving this evening.
