Slice the chicken breasts in half, longwise, then smack slightly to even them out and make a bit thinner. Spread with pesto, roll up, wrap with bacon, secure with a toothpick, drizzle with a bit of olive oil, bake at 200 until done (not long, just can't remember how long).
Chicken,bacon, garlic, chive (or any fresh herbs, really) cream, white wine (or lemon) pasta.
BBQ chicken, bbq bacon on the side and bbq veg! Hardly groundbreaking, but still yum.

Don't know about KNOCKOUT but I do have one recipe that combines bacon and chicken.... It's a Creamy Bacon and/or Chicken & Veg Pasta Dish. Serves 2 really. Bacon and chicken quantities are quite variable - it's up to personal preference. You can also do a bacon only dish with 200g+ of bacon, or a chicken only dish with 480-500g chicken.
2 tbspns evoo
1 large onion, chopped
2 cloves garlic, finely sliced
200g approx. fresh tomatoes, chopped
100g bacon, finely sliced and 300g finely sliced chicken
handful fresh green beans, chopped
160g button mushrooms, sliced
½ cup white wine
6 tbspns tomato paste
2 tspns white sugar
125g pottle sour cream
¼ cup pasta water (towards end)
Approx. 200g pasta (e.g. pappardelle, spirals, etc)
Cook pasta separately in the usual way. Meanwhile, heat oil in large frypan on stove. Sauté onion and garlic until softened, add tomatoes, bacon and/or chicken, beans, mushrooms, wine, tomato paste and sugar, and cook for approx. 10 minutes (lid on to help conserve moisture). Stir in sour cream. Add approx. ¼ cup pasta water, cook a minute or two longer. Drain and stir pasta through the sauce. Serve with grated parmesan sprinkled over.

Also if you bring your chicken up to room temp before you cook it (yes it's ok as long as it's not prolonged) then it cooks through evenly.
I would do basil pesto, and maybe a slice of brie to be really retro.
Or mushroom duxelle would work, maybe with spinach too.
Back in the 90s we did sun dried tomato and feta or tapenade.

Griz, do you add a little wine/stock after browning and cook till done with the lid on.? We don’t eat bacon but the flavour combinations sound delicious.

And don't use this table, it's just flat wrong. If you cook your beef all the way to 65-70C, it certainly will not be medium, it will be something resembling a flooring product.

A slight change of subject here, but I have a note in my recipe book about how to tell the 'done-ness' of steak by using your hand. I don't know where I got this tip from but it seems to work:
Rare: With a relaxed hand, bring the tips of your index finger and thumb together. The muscle at the ball of your hand will feel soft and spongy. This is what a rare steak feels like.
The meat inside will be bright red.
Medium: With a relaxed hand, bring the tips of your thumb and third finger together. The muscle at the ball of your hand will offer more resistance, which is the feel of a medium steak.
The meat will have a pinkish centre.
Well done: With a relaxed hand, bring the tips of your little finger and your thumb together. The muscle at the ball of your hand will feel resistant and very firm; this is how a well done steak feels.
The meat should not be pink inside at all.

Ohhh thanks for the seriously delicious ideas - I actually have HEAPS of chicken breasts in my freezer after buying a bulk load on sale from Gilmore a few months back. Im now even thinking of freezing some of the ideas such as the pesto/bacon and ending up with easy summer working week dinners that are different to my normal.
Tapenade and feta sounds amazing - right up my alley!
The pasta sound great too - my kids will love that. I stick to using mince or a cheesy mac n cheese but chicken and bacon is always a winner so I will add that to our dinner rotations.
