Homemade salad dressings

Does anyone have any nice homemade salad dressing recipes please? I make a creamy mayonnaise with eggs and oil and I used to have a nice honey mustard one but I've misplaced it. Looked at the price of dressings at the supermarket and put them back on the shelf so hoping to find some new ones to try here. Interested in dressings for any kinds of salads, rice, pasta, lettuce etc.

Are you looking for a mayonnaise or a salad dressing, cantabcook?
I remember my mother making a dressing years ago but don't have the recipe.
I like a relatively simple, but delicious mayonnaise from Alison Holst, it came out with a booklet for my blender. It does sound like the one you mention but I can still copy and PM it to you if you wish.

Try adding different herbs to the dressing you have mentioned, or perhaps a bit of saffron and the zest of a lime.
I usually make a basic vinaigrette, 1 part vinegar or lemon juice, a dash of sugar (often leave that out) and a heaped teaspoon of dijon (or use whole seed) mustard, and 3 parts good olive oil, shake in a screw top jar. Add some pesto, or citrus zest, or herbs or chilli, curry powder, really you can experiment with anything if you've got a good base.
I also thin hummus and use that as a creamy dressing, it works nicely on roasted veges.

Thanks guys. Not needing a mayonnaise recipe as I have that covered. Was just wanting to try some new flavours over lettuce salads and even pasta salads. I made a vinaigrette from a recipe the other day but it just didn't taste quite right - will try a variation of your one next time Griz

Mum used to make this sugar salad dressing for lettuce. I wasn't sure of the exact recipe and found this one here and I use it for lettuce. Tastes just like Mum used to make

Mum used to make this sugar salad dressing for lettuce. I wasn't sure of the exact recipe and found this one here and I use it for lettuce. Tastes just like Mum used to make

You don't really need a recipe for a vinaigrette; it's the quality of the oil and the vinegar that make the difference. To develop a vinaigrette that suits you taste, use the very best oil and vinegar you can find and start by mixing three parts of oil to one part of vinegar, add a little salt and a little Dijon mustard, then taste. Adjust so the the acid/salt/ bitterness is in balance and take a note of the quantities you have used.

It was the best wasn't it! I made it lots over last summer for us. And you don't feel like you are making like a rabbit and munching away. George remembers his Mum doing something similar as well, so I wonder if it is a Eastern European thing?

I find most bottled dressings too sweet, so think I'd definitely find that sugar dressing a bit much.
I agree with TPANDAV, good quality vinegar, olive oil (I get it gifted from a friend!) and dijon or other mustard, and balance the salt (although I tend to do that once I've dressed the salad). I've also invested in some really nice Kampot pepper, a couple of twists of my pepper grinder makes it sparkle.

Hi Cantabcook - what about salsa verde? I just had a quick look on taste.com.au, and there seems to be as many versions of it as there are green herbs lol. I've had it on salads and proteins, and it's delish on them all, even though it's technically not a dressing..
I like the dressing in this recipe too, and sometimes put an anchovy in it as well

For a lettuce Salad, I don't use a measured recipe but here are the ingredients, apply to taste:
Red Wine Vinegar
A small amount of Dijon Mustard (binding agent to help emulsify and flavour)
Good Quality Olive Oil
Salt and Pepper
A bit of sugar
Crushed Garlic Clove
I also occasionally add:
Raspberries or other berries depending on what's in season or not
Herbs like Thyme
a Little Lemon Juice
I prefer my dressings to be more vinegar, so the prescribed ratio of oil and vinegar is 2/3 oil 1/3 Vinegar.

Thanks everyone for some good options to check out. Sadly my children's tastebuds seem to have regressed and they turn up their noses at too much flavour (capers, dates and anchovies are likely to be viewed with disdain). However, I often try new things for just hubby and I and they can have their boring old plain salad and we'll just dress our own. And I found my other dressing recipe which I had misplaced which I was very happy about
