Ali, I saw on the London Eats website that sometimes panforte is hard to remove from the tin and that it helps to warm the panforte in the oven to soften a bit to get out of the tin. Would it perhaps work to warm the panforte and wrap it straight away in cling film so that the moisture will stay I side? Just a thought. I regularly do this with my Danish roggebrod as soon as it is out of the oven to keep the crust soft and the moisture in. That’s sourdough bread though. I keep it like this for a couple of days before removing the cli g wrap.

I've never made panforte but have been forced to eat it a couple of times in Italy. If it was my panforte I'd be tempted to pour something over it - probably verjuice. But then I'd need to cut a slice and eat it to see if it fixed it. But I can't because it's for gifting........... And white chocolate + macadamia + verjuice does sound slightly odd in the taste department but also intriguing enough that I want to try it.............

Ah, more liquid sounds like a good idea. Could you ‘mist’ with a little brandy or perhaps vodka if you didn’t want to change the flavour? Perhaps a little dribble of a suitably flavoured liqueur?
