Irish Whisky Fudge

With the season of gift giving upon us I decided to try out a new Jo Seagar recipe I came across in the latest Aus WW. magazine.
It has a whopping amount of sugar in the way of 2 cans of condensed milk, 2 cups of brown sugar, golden syrup then white choc melts etc.- however, it said it makes 60 pieces, Jo said it was okay to eat it now and then, but especially at Christmas. Who wouldn't believe Jo!
Stir, stir, watching the candy thermometer and trying to avoid the spits of mixture as it bubbled away.
Into the recommended size tin and when cool, into the fridge overnight. Next morning hubby helped cut it into exactly 60 pieces (I was always an obedient child too). However - the pieces may be small in size, but are extremely deep! Mmmmm
Put some into a container to share with all and sundry at work (those I could find not doing keto at the moment). Well, I got so much pleasure watching their eyes glaze over - and at times close - as they swished it all over their teeth which were no doubt screaming in fear! One gal was going to save one of her two pieces for her husband - alas - he never knew it existed and it was gone in a flash!
I just love sharing goodies with others and to bring a smile on a busy day.
Now to find a recipe that uses the creamy liquer that has a name that starts with B.

Here you are Ali W. You could also use the same basic principle for other flavours such as the Heavenly Hazelnut using the hazelnut liqueur beginning with Fra and top it with crushed Fer Roc chocolates; or make it Brandy Alexander by adding 3 tbsps brandy & 3/4 cup T*a M*ria; or Berry Harvest using 1/4 boysenberry nip & top with berry fruits . But back to your original flavour request:
250 grams plain biscuits, crushed till fine
½ teaspoon ground cinnamon
100 grams butter, melted
300 grams mascarpone (or use spreadable cream cheese)
250 grams cream cheese, at room temperature
grated rind 1 lemons
¼ cup B*** Ir** cream liqueur
¾ cup icing sugar
3 egg whites
Directions
Mix the crushed biscuits, cinnamon and melted butter together then press into a springform cake tin. Refrigerate while you prepare the filling
Blend together the mascarpone, cream cheese and the lemon rind. Once blended gradually beat in the B's and set aside.
Beat the egg whites until stiff and then gradually beat in the sugar beating until you have a very thick and glossy meringue. Fold the egg whites into the cream cheese and B's mixture.
Pour into chilled base and freeze for about 2 hours then cut in 12 wedges, wiping the knife blade after each cut. Return to the freezer for 8 hours or overnight.
Allow to stand in the fridge for 20 minutes before serving.
Topping Ideas:
Remember, when it comes to decorations, less is more!
Sprinkle a crumbled Flake over the top.
Drizzle with a ready-made flavoured ice-cream topping. Swirl gently with a chopstick.
Crush some Maltesers and sprinkle over the top.

I can vouch for this Baileys Banana and White Chocolate Cake. It makes quite a dense cake that is easy to ice and move around as it doesn't crumble or fall apart.
