For me, feta is all about the flavour. Cottage cheese, tofu, paneer, etc all have their place, but they need other condiments such as soy sauce, miso, etc to mask their blandness. I don't think there is a substitute for feta without radically changing the flavour, not to mention the texture, of the dish.
Oh, I forgot about camembert or brie cheeses. They could possibly substitute for the feta.

I'm sure you could swap cottage cheese for feta in the zucchini/ricotta bake on the home page.
To me, feta is mostly about the salt. It's so salty. Plus that texture, which will disappear in a bake anyway.
When your brother dislikes feta, is it the sheep/goat feta he's only had experience with? (Feta is traditionally sheep milk, with 30% goat added.) Most of the feta on the market these days is fake feta - it's made with cow milk, so if he has an aversion to that then he should have an aversion to all cow cheese. If he only has aversion to the genuine (sheep/goat) feta, then it's really easy to buy cow feta instead.

I think you could make a reasonable substitute by draining and pressing home made ricotta or cottage cheese and adding salt and lemon juice to stand in for the saltiness and acidity of feta. The reason I suggest home made rather than commercially made is that most commercial cottage cheese and some ricotta has added stabilisers which prevent them from draining properly. An exception is Zany Zeus ricotta, which is naturally made, and is excellent.
