Hi Zeetra, haven't done it in a very long time (used to freeze complete roast dinners), but from memory, I found the texture not very pleasant once defrosted and reheated. If you want to get a head start on The Day, could you partially steam or bake the hard veggies (ie potato/kumara/pumpkin etc) a couple of days prior, put them in the fridge, then finish them off on Christmas Day?

Yes, what Heather suggests is something we do on purpose for regular meals sometimes because it creates such lovely roast vegetables. Sometimes I pre-cook the vegetables in a stock (such as Simon Gault's lamb stock) and then finish them off in the oven, which gives them a lovely flavour, texture, etc. You can also steam, say, potatoes or kumara and then "smash" them a bit with a fork or just fluff them heavily by tossing in a pan (lid on) with some fat/oil and then put them on a low-sided oven tray/dish and cook them in the oven, and you end up with lovely veg.....
