I would make a brown chicken stock as the base of the sauce. Use about 800g of chicken wings, drumsticks or a whole chicken with the breasts removed (and kept for another meal). Free range organic if possible. Roast the chicken in a hot oven for about half an hour or until well browned. Cover with water and simmer very gently for about three hours or until the chicken has completely disintegrated. Strain through a fine sieve and chill. Remove the fat. If you want a very clear glossy sauce you could clarify the stock, but I rarely bother.

For putting with pork I'd use chicken carcasses, roasted then turned into stock. But to be honest my go-to for pork, is the Continental brand of packet gravy, I think it's called "Rich Brown", or something similar, I add cider to the drippings in the pan (maybe 1/3 cup per packet of gravy mix) to deglaze, wait until the alcohol smell goes, then add water, bring to the boil and whisk in the packet mix. No one ever knows, and it tastes fab
