Cream Cheese.

Before the lock down I bought cream cheese for asparagus rolls and sandwiches for a small function.I don't use this for any other reason.It has a date stamp as good until may 5th.Can anyone tell me how they use it, I tried to google but it was a bit overwhelming.Does anyone use it regularly or just on occasions as I was trying to do?

Peach and Cream Cheese Muffins:

Or, as a delicious dessert:
Peach & Cream Cheese Slice
Serves 6
100g softened butter
¾ cup sugar
2 eggs
1½ cups flour
2 tspns baking powder
½ cup desiccated coconut
¼ cup milk
Topping:
820g can Wattie’s Peach Slices in Syrup, well drained
250g tub cream cheese
¼ cup sugar
1 egg
dash vanilla essence
ground cinnamon
Cream butter and sugar. Add eggs one at a time, beating well after each addition. Add flour, baking powder, coconut and milk and stir just enough to combine. Spread into a greased 23x23cm slice tin. Arrange peach slices randomly or evenly on top. Blend the cream cheese, sugar, egg and vanilla essence together and pour over the top. Bake at 190°C for 20-25 minutes until golden and well risen. Serve hot or cold in wedges with whipped cream and dusted with ground cinnamon.

Thanks for the lovely recipes here.I'm pretty sure I have all the ingredients of the recipes mentioned. Tpandav I do like cheesecake but I don't ever remember making one so it might need to be a cheesecake for beginners.I didn't realise it was such a versatile product.I will have to buy more after lockdown is relaxed.

I did a strict ketogenic diet for awhile. Carbs less than 15%. Even most vegetables got kicked off the menu as most have too many carbs. Now and again I'd feel "empty" and a spoonful of fat was called for. I compared different fat options and cream cheese came out tops. It was something I normally never ate but it became my go-to spoonful. It was amazing how replete I'd feel after that one spoonful. I have fond memories of it Below is the fat comparison I did at the time.
Cream cheese 30g: 103 calories, 1.8g protein, 1.2g carbs, 10.3g fat, 51.9mg Omega 3, 310mg Omega 6, 29.4mg calcium
Sour cream 30g: 57.9 calories, 0.6g protein, 1.1g carbs, 5.9g far, 24.9mg Omega 3, 188mg Omega 6, 33mg calcium
Cheese cheddar - Colby 30g: 118 calories, 7.1g protein, 0g carbs, 9.6g fat, 83.1mg Omega 3, 203mg Omega 6, 206mg calcium, also good for phosphorus
Butter 1 tb (14g): 100 calories, 0.1g protein, 0 carbs, 11.4g fat, 44.1mg Omega 3, 382mg Omega 6, 0 calcium, also good for Vit E 0.3mg
Extra virgin olive oil 1 tb (14g): 119 calories, 0 protein, 0 carbs, 13.5g fat, 103mg Omega 3, 1318mg Omega 6, also good for Vit E 1.9mg, Vit K 8.1mcg

Jenna that's a good idea thank you,that could become my comfort food easily.Very good.J1 it's funny that you mentioned the empty feeling today, I have found that I have been really hungry these last few weeks yet I have hardly moved and have been very lazy.This morning I was thinking if only there was something I could have to curb this annoying constant hungry feeling.If it is as easy as taking a spoonful of cream cheese I would happily do that.Thank you.
