Reminder of things we don't eat - not even in lockdown

Sorting out my pantry has reminded me of things that we absolutely do not eat, not even in lockdown.
Polenta, an assortment of dried pulses (other than Le Puy lentils), semolina, interesting jam combinations, canned apricots etc... all need to find their way out of the house as they are sitting gathering dust and attracting panty moths. They are just not things we are choosing to eat.
Has anyone else found the same?
It has been quite liberating for me as I am realising how we don't actually need most of that "stuff".

I'm about to give my pantry a good clean out too Helen. The past month has been a golden opportunity to attack these types of chores. I think I'm going to find more than a few things we don't eat much and a few packets of out of date herbs and spices which will need renewing.

My pantry and freezers been having an overhaul as well. In order to preserve my potato supply I've been using coarse grained polenta with quite a few dishes and really enjoying it. Mine has the addition of a decent amount of butter and Parmesan. I love Semolina Gnocchis but forgot that I did until you reminded me I have an unopened packet in one of my newly cleaned freezers. All lovely comforting, cheesy carbohydrate fare.

I would be interested too. I have made stodgy potato gnocchi once. Not a success.
Polenta usé: polenta fries with Parmesan are very addictive.

I would be interested too. I have made stodgy potato gnocchi once. Not a success.

Gnocchi alla romana (From The Italian Kitchen Bible) This recipe has always worked well for me. Make sure your semolina is thoroughly cooked and soft throughout i.e no crunchy bits, and very thick.
For 4-6 servings you need:
1 Litre or 4 cups milk.
225g semolina
75 g freshly grated Parmesan
2 eggs plus an extra yolk, lightly beaten
60g (5tbsp) butter
salt, pepper and nutmeg.
1 Bring the milk to the boil, season with salt, pepper and nutmeg - (give it a taste to ensure enough nutmeg and seasonings) then add the semolina in a steady stream, whisking for about 15 minutes, until the mixture is very thick. Off the heat, stir in half the Parmesan and the beaten eggs.
2. Pour the mixture into a greased baking tray to a thickness of about 1cm /1/2 inch, or spread it over a dampened work surface. Leave to cool completely, then cut out 3cm/1/4" in discs with a plain or fluted pastry cutter.
3. Preheat the oven to 230C Gas 8. Layer the semolina discs in a buttered baking dish, dotting each layer with flakes of butter and a sprinkling of grated Parmesan, finishing with the cheese. Bake the gnocchi in the hot oven for about 15 minutes until browned on top.
Serve with a simple home made tomato sauce or a capsicum sauce I made once went well with it - or beef ragout.

Could this be for the same reason that moths fly out of Irene's wallet when she opens it as she mentioned recently - or is this comment a little below the belt...: (ooops emojis not working again).
Anyway agree with your comment about polenta, Helen - I haven't had it around for a long time as I dislike it intensely. However always have canned apricots in the pantry - sometimes have them with my cereal and yoghurt and apricot sponge with custard and icecream now that the weather is getting cooler - yummo!
Dawn your comment about herbs and spices has started me thinking again about the fact that I always transfer mine into little labelled jars so have no idea how old some of my less often used ones are. Maybe a new system is required and I keep the latter in their packets so that I can keep track of dates.
Unless of course moths fly out when I open them.....

My lockdown has involved trying to find ways for my boy to be independent in the kitchen. I've discovered that he actually can't do the same things as I do in the kitchen, his hands/wrists don't seem to work the same way as mine... so as soon as we get out of lockdown I'll be booking an appointment with an occupational therapist to investigate how to work on this. So we've been eating lots of things out of the slow cooker, because that is easy for him... sadly I strongly dislike most slow cooker meals, which means I take a portion, feed my portion to the dog on the sly, then end up cooking a bacon sandwich for myself later. Anyway, I hate leftovers, especially if they've been slow cooked.... so we just don't eat them and then end up with waste, which I'm also trying to minimise and not succeeding!

You're a good mum, Griz I'm not a fan of slow cooker food either. The only thing I use one for is pulled pork which is just not the same cooked in the oven. I ate the most over-garlicked guacamole of my life yesterday, all the while praising my 14yo for his culinary efforts. I'm still exhaling garlic......

Thanks J1, I'll have a look at your links. Its things like not being able to tip a pot into a colander in the sink, by tipping away, if he tips towards himself he's fine (but at risk of scalding!), and changing angles when he's chopping veges etc. He's 26, so we've likely missed the boat on these things, but we'll do what we can. He managed a pretty creditable chicken casserole with couscous tonight, and he's pretty chuffed with himself.

Hilarious, I was just reading the latest edition of Dish and there was a nice-looking recipe in it that used semolina and I wished I had some. Not that I need yet another ingredient that I only use in a single recipe! My problem in lockdown has been too much food rather than too little (you never know what will be missed out of supermarket deliveries so I keep overbuying) so I haven't been delving into the pantry. I did manage to use some of my emergency tinned peaches yesterday in a caramelised peach and nut cake for my mother's unbirthday (nobody feels like celebrating right now, but there has to be cake!)

I've sort of challenged my self to use up somethings lurking in the pantry , fridge.
Whipped up a really good dahl, with a sad looking bag of yellow split peas
Dried chickpeas, soaked and whipped up some hummus, then made a batch of falafels, then froze the rest to make more falafels. I am also going to try and freeze hummus, to see how it defrosts as we never eat enough at any one time, and end up wasting a lot.
Just about to make up some firm polenta to make some polenta fries for friday night zoom drinks with friends.
Have found an amazing flat bread recipe to use up my big tub of greek yogurt. Best of all it uses 3 ingredients as a basic recipe. Flour, yogurt and baking powder.
Cauli, tried buffalo style, not bad

For anyone wanting to look up relevant recipes, the correct spelling is Aquafaba. I'd been meaning to try this for quite some time and I actually remembered to save the liquid from the chickpeas when I was making something a couple of weeks ago. However, my interest was insufficient and the aquafaba sat in a bowl in the fridge for a few days before I decided I could't really be bothered!

We eat semolina as a desert, make it like a custard, 1 tbs semolina to 1 cup milk & stir until thick add some white or brown sugar to taste ( we prefer brown goes a little like caramel.) oh & add vanilla ess & if you want beat in an egg. I us3d to give it to my children when very young. All my family have it, they still live it as a filler. If you go onto demand on one Nadia Lim shows you how to whip up the juice of your chick peas into a meringue. I think series 4.
