Apple Cake

Hello Foodlovers, can anyone remember a recipe which I'm sure was on this forum a couple of years ago for an Apple Cake which had apples chopped into small cubes. It was a fairly simple recipe and I cooked it in a ring tin but it may not have been stated in the recipe. It's author did tell an amusing story about how the person who made the cake (her mother?) for them, would always take a slice out to try before giving cakes away. I think a couple of people commented that if you made the apple cubes to big they would sink to the bottom. I've looked in the recipes but i don't think any of them are the one I'm after. Thanks

Hi Danube, yes I do remember that recipe and have made it several times - delicious! Yes, the secret is to cut the apple up into very small cubes. Here it is:
2 eggs
1/2c sugar
125g melted butter
1 cup self-raising flour
Rind of 1 lemon
3 apples, peeled and chopped finely (I use Granny Smith)
Cinnamon and sugar for sprinkling on top
Method
1. Turn oven on to 180deg
2. Beat eggs and sugar together until creamy
3. Melt the butter, cool and add to egg and sugar mixture
4.Add flour, lemon rind and apples and mix gently to combine
5. Pour into a greased ring cake tin (I remember some discussion about the size, but I use a 20cm normal round cake tin)
6. Sprinkle with cinnamon and sugar.
7.Bake for 30-40 mins.
I have eaten it both as a dessert with whipped cream and as a cake with coffee.

Thank you Barbara, yes that's the one I was after. I've just made it this afternoon and it is lovely. Such a simple recipe and I had a few sad looking Golden Delicious in the fruit bowl which needed using up. I used a Bundt pan this time and it came out perfectly although I'm tempted to double the recipe next time to properly fill the pan. With the Bundt pan, instead of putting the cinnamon sugar on the top of the cake I waited until I turned it out and sprinkled it all over the finished cake at bit like a donut.
