Interesting as coincidentally I am just about to make my Dad a mussel chowder. I haven't seen Nadia's recipe but will check.
I usually just use red onion, garlic, bacon, leek, butter, fish stock, potato, cream, parsley and a little lemon zest.
Think that is it but will remember when I make and taste.

I do think chowder needs something smokey for its depth of flavour. As I was using fresh mussels I used 2 rashers of bacon to add some flavour.
With smoked fish you certainly don't need bacon.
Dad was so happy. I am in Hokitika for a few days, cooking the things that they like but don't tend to make for themselves.

I think it's probably my unusual relationship with bacon Helen that makes me think this way. I like bacon and eggs but I don't like bacon in any other recipes as I find that it has too strong a flavour and takes over.I also like bacon and egg pie but when I see it in a burger with a meat pattie I just think why? Too many flavours going on there.Annie H I love all seafood, this is a lovely recipe.
