Kidney for Stew

I am making mum and dad a steak and kidney stew and don't know what the best thing is to do with the kidney.
The kidney is cleaned and diced already.
I seem to remember these tough little nuggets of kidney when we were kids but maybe it because I didn't like it then either.

Helen, my mothers steak and kidney pie was the stuff of legend. Good legend! Consequently i haven't made them over all my cooking years, some memories must be preserved untouched. However i know that she used lamb, not beef kidney, and the meat and kidney were covered in seasoned flour before sauteing and then cooked at a low heat in some beef stock until meltingly tender.

Long slow cooking, beef kidney is the best, better flavour.
Always add a dash of sherry and a few dried mixed herbs.
They bring out the richness that a steak and kidney pie is known for.
My dear old Mum used to use skirt steak, but I never see that for sale now.
What about some suet dumplings on top........drool drool!!!!!

I always use beef kidney, which is getting really difficult to find now. I find lamb kidney, gives the stew a completely different taste, sweeter and not so ummmm rich. Growing up on a farm it was a staple!!!! No one in our house will eat it so its always a treat for me! Its so much better, reheated the next day.
