Tofu

I like the following recipe gleaned from a newspaper article and adapted to suit my tastes. It might look long and complicated but if you measure out the spices and prepare the veges before starting to cook, it's ready very soon. And, of course, you can change the vegetables to suit yourself depending on what you like or have on hand, but the Tamarind is the star of the show.. You can also do the same with blocks of Gopala Paneer - I buy mine from New World.
Tofu, Eggplant & Tamarind Curry
4 medium carrots, chopped
¼ cup vegetable oil
1 tablespoon mustard seeds
1½ tablespoons coriander seeds
1 large onion, finely chopped
4 cloves garlic, finely chopped
50g tamarind paste
1 cup boiling water
1 tablespoon turmeric
¼ teaspoon chilli flakes
½ teaspoon black pepper
30 curry leaves
1 medium eggplant, cubed
1 block Firm tofu, cubed
1 cup crushed tomato
1 tablespoon salt
Microwave the chopped carrots fo about 4 minutes until softened.
Meanwhile, heat the oil in a large pan until hot, then add mustard and coriander seeds. Cook until they sizzle and start to pop, then quickly add the onion and garlic, turning the heat down low and cooking for about 5-10 minutes until lightly browned.
Add 1 cup boiling water to the tamarind in a small bowl. Set aside.
Add the turmeric, coriander, chilli flakes, black pepper and curry leaves to the onions and cook for a couple of minutes, then add the eggplant and tofu. Cook on medium heat for 5 minutes, stirring occasionally.
Add the carrots plus the tamarind liquid, tomato and salt.
Turn heat down low and simmer for a further 20 minutes until the eggplant is cooked but still holding together.

Yes! This is a super simple way to do tofu which can be added to many meals as the protein component. It transformed my opinion of tofu. Strictly speaking you should start by slicing a block of tofu into small cubes, put them on paper towels and press them with something heavy for half an hour, but I find that using a firm tofu gives perfectly fine results without all the faff. So:
CRISPY BAKED TOFU
Cube a block of firm tofu (pressing optional!). Mix 1 Tbsp olive oil, 1 Tbsp soy sauce or tamari, and 1 Tbsp cornstarch or arrowroot (I use arrowroot). Combine the tofu with the mixture, spread out on a pan'/baking sheet and bake at 200 degrees C for 25-30 minutes until tofu is crisp.
