A friend came over yesterday and showed me how she makes super quick aioli. No need to drizzle in oil slowly but you do need a stick blender.
I am thrilled to have this tip.
Maybe you have been doing it this way anyway?

Sharon I would keep aioli for up to a week.
I realise that most people don't get through that much aioli at once so wonder if it is soothing perhaps best distributed between jars and gifted to others...
Bridget, my friend who demonstrated the making, goes through a jar with her family each week.

Helen I think the extra egg yolk in the recipe makes the difference, I also used Dijon mustard and not seeded mustard. Lucky enough to have access to 2nds asparagus at our local farmers market, but I still buy 1st grade to support the small vege shop down the road, it is such a seasonal treat, and this season may be short due to warm weather.

Chelsea Winter has a recipe on her site for an even easier aioli, if that's possible. No eggs, she uses non dairy milk. I tried it with creamy dairy milk and it was delicious. [chelseawinter.co.nz]

Hi Marie, what is Creamy Dairy milk? Are you meaning full cream cows milk?
I am curious about using a milk product.
I find aqua faba (chckpea liquid) vegan aioli is delicious. The aqua faba just creates texture as opposed to flavour.
