I was socializing last Friday and mentioned that I am hopeless at cooking pies - the pasty at the bottom is always undercooked.
One of the group said that she had, ages ago seen a hint, and has since had great success. Turn the oven up to really high, cook the pie for 10 minutes and then turn the oven down. Of course cook the pie on the lower shelf of the oven.
Yay, at last a bacon and egg pie with a well cooked bottom. I used a black non stick brownie tin - this probably helped.
I cannot wait for summer, bacon and egg pies will definitely now be on my picnic menu.
cheers Gran

I find that glass style pie dishes always give the best bases. I also put an oven tray in the oven and sit the pie dish on the hot tray.
I agree re hot oven first and then reducing the temperature.
Soggy bases on pies is just awful.
Someone else mentioned here about using a pie dish that has a perforated base.
