Noel is it summer time or winter that you find difficult with your mint?
I do get a bit of rust on mine late summer.
I have frozen mint before in ice cube trays. Essentially pack the mint into the cubes to about half full and then top with water and freeze.
I'm thinking it will go black if frozen in leaf in bags but I could be wrong.

I love cooking with fresh mint, but have never found a way of preserving it. It is similar to sweet basil in that it is more fragile than it looks, and turns black and nasty very quickly.
Dried mint is another story, it doesn't take the place of fresh mint but has its own character and is invaluable in Middle Eastern and North African cooking.
